Flaxseed oat biscuits

These biscuits may not fit into the category of diet biscuits, but they are healthy – wholemeal flour, oatmeal and Iecavnieks flaxseed – both ground and whole. Big, healthy biscuits to go with afternoon tea.

Ingredients:
Wholemeal oat flakes
120 g
Iecavnieks ground flaxseed
60 g
Whole Iecavnieks flaxseed
2 tablespoons
Wholemeal flour
40 g
A pinch of salt
Baking powder
½ teaspoon
Cinnamon
1 teaspoon
Butter
90 g
Egg
1 pcs
Brown sugar
120 g
Raisins or nuts
150 g
Preparation:
  1. Place the butter in a bowl at room temperature, add the sugar, salt and cinnamon, and beat with a mixer; then add the egg and beat that in as well. 
  2. Sift in the flour, add the Iecavnieks ground flaxseed, Iecavnieks whole flaxseed, oat flakes and baking powder, and stir. Finally, add the raisins and stir them in as well. The mixture will be crumbly but should hold together when squeezed in the palm of the hand.
  3. Form 12 biscuits out of the dough and arrange them on a baking tray lined with baking paper. The biscuits will expand slightly in the heat, so they should be spaced apart on the baking tray.
  4. Bake the biscuits in a preheated oven at 180 ºC for 20–25 minutes until golden. Cool before serving.
