Heat the rapeseed oil in a pan and fry the bread slices. Fry until golden on both sides.
Mix the cottage cheese with the Greek yoghurt. Add salt to taste.
Peel the avocado and cut into thin slices.
‘Build’ the breakfast sandwiches. Smear a slice of bread thoroughly with Iecavnieks hemp butter, top with a thick layer of cottage cheese and then avocado, sprinkle with sprouts.
